Ingredients
- Apricots – 1 kilo
- Sugar – 750 gms
- Whipped cream – 2-3 tbsps
- Lime juice – 1 juiced from one lemon
- Cashew nuts – 10
- Raisins – 8
Preparation Method
- Soak the apricots in water and leave overnight.
- The next morning boil them enough to make them soft and tender.
- Once they are cooled, deseed & mash them and keep the seeds aside.
- Now add the sugar to the soaked apricots and heat in a pan.
- Let it simmer on a low flame. Stir constantly.
- Let it cook for nearly an hour until the apricots are very soft.
- Just before turning off the flame, add the lime juice and cream to the stewed apricots and mix well.
- Garnish with cashew nuts, raisins and the apricots.
- Serve with ice cream
