Maida Biscuit/ Diamond Cuts




Maida Biscuit

Ingredients

  • Maida flour                      - 500 gms
  • Sugar                                  - 300 gms
  • Eggs                                    -2
  • Butter                                 -50 gms
  • Milk                                     -100 ml
  • Cookind soda                   – 1/4  tsp
  • Vanaspathi/Dalda         – 50gms
  • Oil for deep frying

Preparation Method

Boil milk and mix sugar in that.

Once the sugar got dissolved, pour and beat the eggs along with dalda & cooking soda.

Now add maida flour and make dough out of it.

It should not be loose or very hard.

Make a big ball and start spreading using the wooden roller like you do for chapathi of about 1/2 cm thick.

Make a vertical cut(lines) using a knife  of about 1 cm width.

Make horizontal  lines so that diamond shape comes.

Repeat the same for the remaining dough.

Heat the oil in a frying pan, once it has become very hot, reduce to low flame.

Now put the biscuits in the oil and deep fry.

At a time, you can fry a handful of biscuits.

Wait till it turns to golden brown color, once you have removed from the heat it will become some more dark color.

Once done with all, store it in an air tight container. 

Variation

Egg gives extra taste to the biscuits, but the biscuits will come well even without eggs also.

Word of caution

If the oil is very hot/ in high flame, the biscuits will become brown very fast without get cooked inside. So always cook in a low flame (make sure that oil is hot enough)
